Fun Summer cocktails

As soon as the summer heat hits, the first thing we run to are our favourite summer cocktails.  The more refreshing the better, and boy do we have some good ones for you!  We decided to start off with what we think is the most refreshing and delicious summer cocktail of them all ...

Frozen Tequila-Lime punch:

  • 1 pint lime sorbet
  • 1 2L bottle of Sprite or Lemon Lime soda
  • As much Tequila as you like.  We like it strong!
In a punch bowl, pour in your Tequila, start with 5oz, you can always add more later on.  Add in the full pint of lime sorbet and just about half the 2L of Sprite.  Mix and taste, adjust Tequila and Soda to your taste.

So easy, so refreshing, this cocktail is a hit any time!


Pimm's Punch:
  • 2 cups of chilled Pimm's No.1
  • 3 cups of chilled Ginger-ale
  • 3 cups of chilled lemonade
  • 1 orange sliced
  • 1 lemon slices
  • 2 limes sliced
  • sprigs of fresh mint
  • ice cubes
This summer classic is dangerous and oh so delicious.  Once you start drinking this refreshing light beverage, you won't want to stop!  Mix all ingredients in a punch bowl except the mint and serve in high ball glasses with some ice cubes.  Garnish with sprigs of fresh mint.

Baby Back Ribs

Every summer we make way too many racks of ribs and eat them all!  Ribs are one of our most favourite things to eat on a hot summer day, so naturally we decided to share two recipes, one of which is our most favourite. Memphians love their ribs and are very particular on how to prepare them.  They swear by this dry-rub recipe. Memphis style dry-rub : 2 tbsp. kosher salt 2 tbsp. dark brown sugar 2 tbsp. paprika 1 tbsp. dried oregano 1 tbsp. ground black pepper 1 tbsp. garlic powder 1 tbsp. onion powder 1 tsp. dried thyme 1 tsp. dried marjoram 1 tsp. dried parsley 1 tsp. ground cumin 1 tsp. dry mustard 1 tsp. celery seeds 1/2 tsp. cayenne pepper 1/2 tsp. ground fennel seeds 1/2 tsp. ground white pepper Mix all ingredients together to make the perfect rub.  This spice rub can be stored if properly sealed for up to 6 months.   Basting Juice : 3/4 cup apple cider vinegar 1/2 cup Memphis style dry-rub Ribs : Start with 2 tbsp of the spice
